Meet April from April’s Cosy Kitchen

Welcome to April’s Cosy Kitchen!

My little corner of the internet where I share with you my passion for food including food suitable from 6 months plus and provide guidance on how to made meals suitable for dietary needs where possible.

Hi! I’m April, mum of 2 littles, food lover and amateur baker. I have always had an interest in cooking and baking but before having my children it always took a backseat.

When I had my daughter and started researching and diving into the weaning stage. Food took on a whole new meaning for me. I was no longer just feeding myself I was now feeding a small human who relied on me to feed her and provide her with the nutrients that she needed.

Now my little ones are getting older and less dependent on me, I have been able to explore my love of food and experiment a lot more. I enjoy gaining new skills and making a mess in the kitchen as I go.

This is where that interest turned into a passion and my children continue to fuel this fire.

A Little About Me

I grew up and still continue to live in South Wales in the UK, an area which is fondly referred to as ‘the valleys’. Don’t let the terrible documentary that was released a few years ago under the same title fool you, in reality it is an area of multiple towns with tight knit communities in the heart of Wales. We are very passionate people who might be a little rough around the edges sometimes.

My husband and I have lived in our little mining town for the last 10 years and where we live right now is a stepping stone in our journey to our forever home. To us it’s the house and an environment that we are raising our children to thrive. I’m deep down a small town girl who dreams of a country life with a big kitchen. For now though my cosy kitchen does the job.

I spent all of my late teens into my early twenties attending university. I hold not one but three different university qualifications. These looks at areas including religion, social and cultural anthropology, archaeology and forensic science. Which is a whole universe away from cooking and baking.

I had my first child, my daughter, in the midst of lockdown in January 2021. I then went onto have my second child, my son, in October 2022. They were born down to the day 21 months a part. Which has been a wild ride!

Some Fun Facts About Me

  • I’ve lived in Wales, England and Scotland.
  • I have an MSc Forensic Anthropology and one of my all time favourite to series is ‘Bones’. Even though the fact and fiction are so different from each other!
  • I had a c-section followed by a successful VBAC
  • I got married on the beach in Cancun, Mexico in 2019
  • I speak Spanish at a conversational level and LOVE Latin American culture and food!
  • I collect and hoard all types of books and have an obsession with cookbooks and food fiction. My dream would be to have Belle’s library in Beauty and the Beast.
  • When you first meet me I seem very quiet. In reality, when you get to know me, I am naturally very sarcastic and my friends always say they can hear me before they see me.
  • I always overestimate my ability when starting something new. If I see a Instagram reel for something random you can be sure I will give it a go. In my mind I’m superwomen and the task will be easy. In reality 9 times out of 10 it looks like my toddler made it. (If I can get away with saying she did then I will haha)
